The Boudin

Presentation: Vacuum packed and frozen solid.
Casing: Depends on how you prepare it. A medium thick casing.
Meat/Rice Ratio: A balanced combo of rice and meat, tending toward the rice.
Texture: The rice is a bit undercooked, but overall it serves adequately as the base for a pleasingly tight texture.
Spice: Medium/Mild
Overall Flavor:
A really flavorful and satisfying link of boudin. Plenty of
quality pork and plenty of tasty rice are balanced out with a
thoughtful combination of spices.
Comments:
Who'd have thought that just off the white sand beaches of
Pensacola, tucked off behind some chain restaurants was a delightful
Cajun specialty meat store. They offer a whole range of products
too, from gumbo and boudin balls to cannoli. The crawfish boudin
was also sampled and stood out as a particularly flavorful and pleasant
choice.
