Comeaux's - W. Congress
This place is no longer in business.  There is a new business in its place and they shall be reviewed at another time.  The current review will remain as a tribute to what was a great link.
Location: Out of Business in February 2005.

Ambiance:  A Cajun convenience store on the Southside of town.  They sell a selection of smoked meats, stuffed chickens, crawfish pies and other items.  Their plate lunches come from a spotless kitchen and are well received. A clean and modern building.  The shelves and refrigerator cases are sparsely filled and their hours are not as early as some other places.



THE BOUDIN
Price: $3.29 lb.
Presentation:  Wrapped in a thin piece of white butcher paper.
Casing: Excellent, crisp and thin.
Rice/Meat Ratio: More meat than rice.
Texture: A sticky, dry texture.  All the ingredients cling to one another.   
Spices: Medium/ Hot. 
Overall Taste: This link is a classic taste.  When most people in south Louisiana think of the great taste of boudin, they think of this flavor harmony.  It is truly, a traditional link of boudin.
Comments:  Of the different places tried, Comeaux's has the highest price for their links.  The taste is definitely worth every penny. On this stop, the links were not as warm as we expect.  There are other Comeaux's in town and it is important to note that this review is of the W. Congress location.
