| Location: 1020 Martin Luther King, Jr. Drive Ambiance: Tucked deep within a neighborhood suffering from a wee bit of blight. Don't stop too long to linger at the burned out houses. The market itself is a locals type of place that serves an important role as a grocery store for the entire neighborhood. If you're not from these parts it is best to get in, mind your own business, and get out. Everyone was friendly. |

| THE BOUDIN
Cost: $2.50 lb. Presentation: At the back of the store you'll find the meat counter. The link will be wrapped in a piece of heavy aluminum foil and placed in a paper bag. You'll need to make your way to the register at the front to pay. Casing: Sort of gummy. Rice/Meat Ratio: Equal amounts of rice and meat. Texture: Lots of long grain rice in a juicy, but not greasy, link. Tightly packed, the link resembles a bratwurst more than a traditional link. Lots of tiny bits of onion throughout. Spice: Medium. Overall Taste: You'll like it. A nice punchy taste. Not outstanding, but pretty darn good. Comments: Deshotel's motto is “Where the Boudin's Always Hot.” I don't know if that means that they're always selling it or if it refers to the spiciness of the link. It didn't seem too spicy/hot, so I guess they sell it all the time. If you venture up to Ville Platte let me know your own findings. I've seen this touted as a “Creole” boudin. |
