Ambiance: Arriving on a foggy December morning adds a bit of mystery to this Northside boudin stop, but don’t be panicked by the place’s rough exterior. Inside you’ll find a warm and friendly staff who can hook you up with all sorts of quality meats from hog head cheese to country style pork sausage.

Presentation: Snatched from a metal colander placed on top of a pot of steaming water (old school style), set on a rectangle of Styrofoam, and wrapped.
Casing: Soft and brittle.
Rice/Meat Ratio: More rice than meat.
Texture: A semi-loose, smooth, filling of whole bits of long grain rice and plenty of pulverized pork with a thin coating of juice.
Overall Taste: DELICIOUS! This is a really good link. It has a reddish hue and a bit of oil all contributing to an explosion of ricey flavor punctuated by lean porky goodness. Every once in a while you'll get a crunchy bit of sweet onion, but you won’t be overpowered by greens here.
Comments: Guidroz has been in business for 47 years and they’re lining up another generation or two to keep the business thriving. Churning out 1,200 pounds of boudin a week is just one indication that people love this link and we all benefit from their dedication to not skimping on quality.
