Stand right up to the counter and get what you
need. And, don't forget to pick up a shaker of their famous
seasoning blend. It is fantastic and it is a bargain.

The desk-table-office: This may look like a back room office, but
it is actually located in a corner of the restaurant itself..
Mrs. Hackett is, justifiably, proud of the food made at her Cajun Kitchen.

Ambiance:
A delightfully friendly kitchen and meat shop where you can order up a
first-rate plate lunch and/or walk away with some great sausage,
boudin, andouille, or tasso. The walls are adorned with some
customer-hostile signs which are not at all indicative of the way the
customer will be treated. The owners are ever-present and run a
tight shop from their desk-table-office situated right inside the
dining area.
Location: 5614 Gerstner Memorial Blvd, Lake Charles, LA
The Boudin
Price: $3.10 lb
Presentation: Tightly wrapped in a huge piece of butcher paper.
Casing: The casing is thin and crisp.
Meat/Rice Ratio: More rice than meat, but they play off of each other in a well choreographed dance of starch and protein.
Texture: Crisp onion, perfectly cooked extra long grain rice and a delicious pulverized meat mixture.
Spice: Mild/Medium (the warmth is slow).
Overall Flavor: This is one fantastic link with a nearly
imperceptible liver taste. It is giant and packed with flavor
that is, literally, bursting out of the casing. Nice, juicy, reddish. Yum!
Comments:
This is a huge link (weighing almost an entire pound). They
sell a spicy and a mild version: I recommend the spicy. They also
sell crawfish and shrimp boudin.
