
This is Shawn's second location. An earlier location in
Lafayette is now used as a production site and for deer processing.
It is worth the drive to check out some of the fine products.

Along with a full line of fresh cut or ground meats, Shawn's turns
out some awesome meatballs, specialty meat creations like stuffed
pork tenderloin, smoked turkey necks and ham hocks, and some out-of-this-world sausages (like their original
syrup sausage (this ain't
Jimmy Dean).

Ambiance: They're
packing a lot into this little building in Delcambre: groceries,
specialty meats, frozen foods, and drinks (not to mention some
tasty hot boudin). This tiny shrimping village is best
known for the blessing of the fleet and the shrimp festival, but
Shawn's is bringing something everyone can use more of:

The Boudin
Price: $3.39 lb.
Presentation: In a warmer
at the register. Hand selected and individually wrapped in
foil paper. Casing: A
thin, taught, casing that easily snaps and is strong enough for
squeezing the filling.
Meat/Rice Ratio:
Nearly equal amounts of rice and meat tending to favor the rice. Texture: The
filling is dry with plump grains of rice and various textures of
pork. Some of the pork is pulverized and some small chunks
are widely interspersed. The pieces of pork are tender to
the point of shredding apart. Particles of fresh green
onion abound.
Spice: Medium/Mild Overall Flavor: A
distinctly sweet and meaty flavor defines this link. It is
tasty and satisfying with plenty of texture and a hint of
uniqueness in the recipe.
Comments: Rumor has it that
Shawn's makes a mean chicken boudin as well and I'll be looking
forward to sampling it the next time I'm passing through
Delcambre. Make sure to try some of their other specialty
sausage creations, particularly the syrup sausage.
