Ambiance: A
fabulously simple corner store with a legendary reputation for
service and meat products. This place is family run
through and through. Location:

The Boudin
Price: .3.19 lb
Presentation: Hot and
ready to go. They will wrap it on a Styrofoam meat tray.
Casing: Thin and "crispish."
Not crispy.
Meat/Rice Ratio: Equal
amounts of rice and meat. Some of the meat is certainly from
the "richer" parts of the pig.
Texture: Kind of dry
and sticky. There are various meaty components to the link.
Not easy to find the green onions. If you look you'll find
them though.
Spice: Medium Overall Flavor: Black
peppery. You'll be hit with a rich black pepper scent as you
open the package and the black pepper flavor stands out when you eat
this link. The off-grey color is fun and the use of various
pork flavors adds a depth of flavor lacking in many links.
Comments: This place and
this link are "old school." The recipe is generations old and
you can almost taste the tradition. Cottonport is curious place to
visit, the setting of the store on a street filled with historic
buildings harkens back to a bygone day. Add a link from
T-Jim's to the mix and you'll feel like you're back in the 1920s.
