Eunice Poultry in Eunice, LA = B- Rated Boudin


Ambiance: Make your way to Eunice to go to the Prairie Acadian Cultural Center and to see a show at the Liberty Theater.  While you’re there check around for a number of memorable boudin stops, including the Eunice Poultry.  They’ve been in business for 50 years and lots of people love their products.  The place is a classic meat shop with a super friendly group of workers and it is located right in the middle of town.

Fresh Boudain Sausage

Price: $3.59 per link.

Presentation:  In a steamer just out of arms reach sites a large batch of steaming boudin that will be wrapped for you upon ordering.

Casing: Thin and ready for squeezing.

Meat/Rice Ratio: More rice than meat.

Texture: Ricey and moist with some oniony goodness.


The essence of paprika throughout.

Spice: Mild

Overall Flavor:   The reddish hue of the link belies the overuse of paprika, which imparts a sort of dusty bitter edge to the link and comes to define its flavor.  The preponderance of rice is not a problem and there is enough meat to make it a worthy contender.
