The essence of paprika throughout.

Spice: Mild

Overall Flavor:   The reddish hue of the link belies the overuse of paprika, which imparts a sort of dusty bitter edge to the link and comes to define its flavor.  The preponderance of rice is not a problem and there is enough meat to make it a worthy contender.

Comments:  A fun stop in your pursuit of Louisiana’s Extraordinary link.  You can also check out a review of their Cracklin!
