Jacob’s World Famous Andouille in La Place, LA = B- Rated Boudin
Ambiance: A colorful and fun store in what bills itself as the andouille capital of the world. Inside the front door is a tiny room with a small meat case and a freezer case. That’s about it. This place is best known for their andouille and they at the ready to set you up with one or two or two dozen. Nice folks.
Location: 505 W. Airline Hwy, Laplace, LA 70068
Price: $3.40 lb.
Presentation: Vacuum packed for take home eating. Not available hot-on-the-spot.
Casing: Sometimes crisp, sometimes rubbery or broken. It depends because you heat it yourself.
Meat/Rice Ratio: More rice than meat but just by a smidgen.
Texture: Pasty and sapless.
Overall Flavor: Off. Is it liver? Is it black pepper? Is it parsley? There is a distinct similarity between this type of a link and the commercial links of “boudain” that come out of Texas. They have as similarly processed pork meat that is pelletized and the rice is mangled.
Comments: I picked up a giant link of andouille and I expect that it is going to be fantastic. This place has been in business for nearly 80 years and they have certainly perfected the andouille. And, since they are smoking so much andouille, they are also inclined to smoke just about anything and it all looks delicious (chicken, turkey legs, pig tails, ham hocks, tasso). Boudin may be just an afterthought.
