Ambiance: This place looks like it has been around for quite some time. The addition of a large covered gas station to the front does not add anything to the overall look: It may even detract from it. I suspect the fact that both sides of the store have letters missing from the sign is an indication of things to come.
Location: Hwy 44 and Hwy 933, Galvez, LA (near Gonzales)
Price: $3.99 lb.
Presentation: Wrapped in foil. This seems to be the “Gonzales way.”
Casing: Very crisp and sealed around the interior ingredients like a vacuum pack.
Meat/Rice Ratio: More rice than meat, perhaps a 65/35 ratio.
Texture: Whole grains and mashed grains co-mingle with plenty of green onion and pork and pork liver. It is on the dry side, but not at all too dry.
Overall Flavor: There is a liver taste, but it is not overpowering. The link has a nice color too, showing off the melding of all the ingredients.
Comments: The fine women working at Veillon’s are as nice as nice can get.
