Ambiance: A fine place for all your smoked meat needs. They even have the spices you need to do-it-yourself. The building is “non-descript” and suffered some hurrican damage, but they are over that and are ready for business. If you don’t like mounted deer and elk heads you might want to send someone in in your stead.

THE BOUDIN

Price: $3.29 lb

Presentation: Pre-wrapped in a double layer of foil, the link is pulled from a warming roaster.

Casing: Extremely brittle: Will break of with a resounding “snap.”

Rice/Meat Ratio: More meat than rice.

Texture: A dry combination of full bits of rice with plenty of meat in both mini-morsels and pulverized form.

Spice: Medium/Hot

Overall Taste: Excellent and well-spiced. Although the link is on the dry side of the river, it still packs a delicious and hearty blend of ingredients. Tiny bits of pork are present throughout the link along with gracious amounts of rice and petite specs of onions and peppers; it is satisfying in all the right ways. It is also a huge and filling link.

Comments: Give these folks credit: They know that Acadiana has some tastes worth replicating and they’re decent enough to give the region its proper billing. Their specialty meat case is overflowing with delightful delicacies including seasoned rib eyes, tamales, and freshly smoked meats and sausages. The place may not look like much from the outside and it may have more space than they know what to do with, but they certainly know how to put out some excellent meats. As far as we can tell, this is the closest place to New Orleans to get into some top notch boudin and it is certainly worth the drive from either N.O. or Baton Rouge.

Look at that meat case and check out that hard-core smoke house with summer sausages-a-smoking. This is the real deal!
