Ambiance: On the outskirts of Iota — home to the fighting Bulldogs — is Coleman’s Sausage.  Simple and nondescript is the building (and the parking lot too for that matter!).  But inside this classic country meat shop is a whole lotta goodness.  It is a hands-on family operation exhibiting a great attention to quality and cleanliness.  This is a first rate stop for all sorts of meats, sausages and other creations.  Arrive early.  They close at Noon on Saturday!

Presentation:  Get there before Noon on Saturday to have your fresh links served right from the steamer and carefully wrapped in white butcher paper.

Casing: The casing is thin but super strong.  You’ll find it easier to squeeze the filling from this casing!

Meat/Rice Ratio: Equal amounts of meat and rice.

Texture: The meat in this link is pulverized to the point of creaminess but the rice is mostly intact and there are HUGE chunks of green onion that are still crunchy.  You don’t find that every day!

Spice: Mild, Mild, Mild.

Overall Flavor:   There is a good balance of flavors here in this family recipe.  The rice is white (like it has been added after all the other ingredients were cooked and mixed) and there are no artificial colors, so the rice retains its natural look.  The green onion is a wonderful addition and we rarely find a boudin maker willing to add so much fresh green onions.  The pork and pork liver are tasty, but a little too pulverized.

Comments:  There aren’t any other places to find a homemade link in these parts, but you really don’t need any other.  Coleman’s has a well deserved reputation for quality meat products and we can’t wait to get back out there to get some more.
