Kelones’ Grocery in Mansura, LA = B Rated Boudin
Ambiance: Mansura calls itself the cochon de lait capital of the world — And why not? Anyway, they’re right on the way to the casino in Marksville and this is a well-worn store that imbues a certain sense of community. You know this is where most of the people of Mansura pop in for staples and fresh meat, brews, and such. So, it has an ambiance that is very comfortable and unpretentious.

Presentation: We had to purchase ours by the sack full. A whole heap of frozen links to take home. They were out of the hot and ready to go boudin. However, normally you get your hot links at the small meat case in the back of the store.
Casing: The casing is thin and will crisp up nicely.
Meat/Rice Ratio: More rice than meat.
Texture: The texture is dominated by the rice which is a tad under cooked and those somewhat hard grains are chopped into small pieces. The meat in this not-to-dry/not-to-moist link is completely ground and there are no veggies to speak of. It looks like a meat and rice link.
Overall Flavor: There is the unmask-able scent and flavor of liver emanating from these links, but they really hit the right balance and it comes through with a smooth, clean, and simple flavor.
Comments: Kelone’s is a classic, that is for sure. A small town grocery store right next to the tracks where they’re serving the needs of their community. This is a boudin stop that we really appreciate for the nostalgia factor. Give them a try and appreciate what they stand for.
