Ambiance: A cool little meat market and hot food location right along the highway headed through historic St. Francisville.  They have a variety of meats, sausages, and prepared foods that you can take with you to-go and a selection of fried and boudin items to eat right outside on a nice wooden picnic table.

We’ve been told our boudin balls are better than Billy’s.” If nothing else, this statement demonstrates the power of one of Acadiana’s finest links: Ahh, the power of Billy’s boudin balls!  Are they similar to Billy’s? . . . . . sort of.  Are they as good as Billy’s? . . . . . . . probably not.  However, this is a fine link and a fine boudin ball, especially when you’re so far away from the center of the boudinverse.  As best we can tell this is the only homemade link of boudin within a 20 mile radius!!  — The boudin is flavorful and consisting of a mash of meat and rice with a melding of flavors that makes it hard to put one’s finger on any predominant highlight.  The balance is on point with an even mix of rice and meat while the texture is not too dry.  Between the link of smoked or regular boudin we’d go with the smoked.  It has a deeper flavor and, after-all, this is a “smokehouse,” so let them do what they do best.

- St. Francisville is a cool little historic town and it is right on the road to one of our favorite hikins spots in the area.  Additionally, it is on the road one takes to Angola Prison for the rodeo (or whatever).  It is easy for ust to proclaim this a “must stop” for a drink and a link.  Give them a try and let us know what you think.The Francis Smokehouse
